This is a great side dish for many dishes, not just Mexican food. Not only is it delicious but it is instant in preparation as well for we have already added the tomato, onion, bell pepper, garlic and spices all you do is add water and in 20 minutes you have a delicious authentic New Mexican Spanish Rice. This freezes well also. Serves 4-6.
